A wine list can be filled with famous labels. We prefer to fill it with discerning taste. IN's cellar focuses on Italian grapes with character and wines that can stand up to a long conversation and a serious barbecue.

Sangiovese, Barbera, Nebbiolo

The heart of the menu is the characterful Italian reds: Sangiovese, Barbera, and Nebbiolo, alongside whites from northern Italy that refresh the fresh pasta from the lab. Hundreds of selections are stored in the Cantina, our two-level underground wine cellar.

Wines for meats aged on charcoal for 110 days

When meat is aged for up to 110 days, the wine pairing can't be just any old wine. That's why our selection includes Spanish wines specifically chosen to complement our grilled cuts: Reggiana beef, Wagyu, Angus. Power meets power.

Mario Caruso, the man from the winery

Our sommelier and founding partner, trained at Alma like the rest of the team, decides what goes into the Cantina and what doesn't. Ask him in the dining room: wine pairing is one of those things we prefer to do in person, plate in front of us and glass in hand.
