Fresh pasta in Madrid: the Chamberí laboratory

In many Italian restaurants in Madrid, the pasta arrives from a bakery. At IN RistoLab, you see it being made. Our pasta laboratory is in the middle of the dining room, framed in mustard, and that's where the fresh pasta of the day is kneaded every morning. It's not just decoration: it's the reason we're called RistoLab.

The Carbonara Explosion: our signature dish

Classic carbonara, deconstructed. Pasta filled with carbonara, crispy guanciale, and pecorino cream: the yolk, the guanciale, the pecorino—everything, but in reverse. It's the dish that many people cross Madrid to Chamberí for, and yes: it's a hit.

Ravioli, pappardella and our version of the classics

The fresh pasta menu changes with the season, but always stays within the same core offerings: Ravioli Scarpariello filled with cherry tomatoes, Parmigiano Reggiano, and basil; Pappardella alla Cacciatora with guinea fowl ragu; our version of Amatriciana, with double-cooked pasta and Pecorino Romano; and Tagliolini AOP with grilled squid and Amur Royal caviar. Classics we don't repeat: we understand them.

Pasta workshops: come into the laboratory

The Lab also extends beyond the counter. In our pasta workshops, you'll learn to knead fresh pasta from scratch with our chefs, trained at Alma. A unique option in Chamberí for those who want more than just a meal—bookable through our website.

An Italian restaurant that doesn't repeat recipes

IN is an Italian restaurant in Chamberí that refuses to sound like all the other Italian restaurants in Madrid. We call it Cuisine Without Codes: Alma's technique, the intuition of four Italian chefs, and a menu that reinvents itself every season.
