Our Revolution: Cooking Without Codes
Madrid is full of Italian restaurants. We opened something different. IN RistoLab is a laboratory in Chamberí where Italian cuisine is discussed, tested, and reinvented every day. No manual. No script. No rules.
Intelligenze Naturali: the hand before the algorithm
IN stands for Intelligenze Naturali (Natural Intelligences). In a world that automates even recipes, we champion the opposite: the hand, the craft, the intuition. Every dish that comes out of our kitchen is a human decision, made by an Italian chef right in front of you. That's why no one eats the same thing twice here.

Grilled meat in Chamberí and aged for up to 110 days
The other soul of IN is fire. Bone-in and boneless cuts you won't find anywhere else in Madrid: Reggiana beef—we're the only ones in the city—Japanese and Australian Wagyu, Uruguayan Angus, and aged cuts that reach up to 110 days. If you're looking for the best steakhouse in Madrid, this grill has what it takes.

A restaurant designed by an artist
The space is designed by Annalisa Maione, DADA. It's not decoration: it's a habitable work of art. Ten zones, each with its own color and story—from the orange blue of the entrance to the mustard of the bathrooms—a scenographic mural, handmade paper flowers, and a wine cellar with swings. Yes, swings.
